4 Sticks Butter

4# Sausage

4 1/2 Cups Trinity

48 oz Rotel Tomatoes

4 TBSP Minced Garlic

4.5 Lbs seafood mix

1 bunch Green Onions

Creole Seasoning to taste

4 Cups cooked rice

CREOLE SEASONING

1/2 Cup Salt

1 Cup of each of the following:

Black Pepper

Cayenne Pepper

Chilli Powder

Garlic Powder

Paprika

Onion powder

Combine in bowl mix well.

Melt butter, add trinity and cook till veggies are soft.


Add your garlic and sausage and seasoning, cover and cook on medium high heat for about 12 minutes. Next add your Rotel Tomatoes. Cook an additional 12 minutes. Add seafood and cover and cook approximately 8-10 minutes stirring occasionally. Add your rice and mix very well. Mix in your green Onions, cover and let sit for about 10 minutes. Uncover, stir and serve with fresh southern Sweet tea.
