I use mayo mixed with a little chili powder and paprika. Blend the yoke mix until there are no lumps.
Wet the egg white halfs with a little water and roll them one at a time in white flower. Egg wash each half and roll in panko breadcrumbs.
I use a large frying pan with high sides for my oil. Get your oil hot enough for water to pop .. you dont want your oil too too hot. Start placing your eggs in the oil carefully with tongs. I do about a dozen at a time. By the time I place the last egg in, it's time to start flipping the 1st one. They cook in about 30 seconds to a minute on each side.
Remove the egg whites and spoon the yoke mixture in. "Or use a piping bag if you want to be fancy". Top with a thin slice of fresh jalapeno and enjoy.
